Crispy Fried Zucchini – Gregcipes
Ingredients:
1 large zucchini
1/2 cup flour (plus some more for adjustments) for the batter
some more flour for dredging
1/2 cup corn starch
1/2 cup water (plus more for adjustments)
1 egg
1/2 tbsp black pepper
1/2 tbsp onion powder
1/2 tbsp paprika
1 tbsp garlic powder
1 dash of cayenne pepper
panko breadcrumbs
dried parsley
salt
Directions:
Slice zucchini into 24 equal pieces as directed in the video including removal of part of the seeds. Generously salt zucchini pieces and let sit for 10-15 minutes. Prepare the batter by combining flour, corn starch, egg, water, and seasonings in a bowl. Adjust thickness of batter by adding flour (to make it thicker) or water (to make it thinner). Thickness of the batter will determine how thick the final coating is, and there is a wide window of thickness where adhesion to the zucchini is not affected, so don't worry too much about thinning out the batter more than I did in the video. Prepare a dredging station by dumping some flour onto a plate and the panko breadcrumbs onto another. Add dried parsley to the breadcrumbs to taste. Dry off the zucchini. Bread the zucchini by first coating them in the flour (shaking off excess flour), then covering them in the batter (letting excess batter run off), and then covering them in breadcrumbs. After breading, add zucchini immediately to a pan filled with about 1/2 inch of oil over medium heat (I let my oil get to ~375F). Add only 4 zucchini at a time to maintain heat. Cook for ~2 minutes per side or until golden brown and crispy. Remove zucchini to a paper towel-lined plate and sprinkle salt over them. Serve right away and enjoy!

    You can place the flour, batter, bread crumbs individually in ziplock bags and dump a hand full of zucchini at a time from bag to bag to coat them faster. I make mine that way and they are ready to fry in minutes.

      oh god, yes. my mother was born in 1920 and was a teenager during the great depression. she used a rubber spatula to incorporate EVERY LAST DROP of ingredients. she learned how to conserve every last bit of flavor. french peasant food of the 1800s does exactly the same thing.

    I made this last night using home made beef broth, and it was awesome. My only regret was that I didn't buy a bigger brisket. It was tender and flavorful, and I paired it with sautéed broccoli and mashed potatoes. Perfect comfort food!

    I want to try this recipe but I'd split the drippings in half and make a Yorkshire pudding in the roasting pan. That's easier than going through all the mess of individual muffins as and keep an ajus gravy

    I am really impressed and delighted how mine turned out, after putting my own twist of ingredients to it. I added fresh red and orange peppers, celery, onions, scallions, fresh garlic, fresh parsley, fresh lemon juice. I love flavor! It was great! I am allergic to shell fish.

      I do it the same way you do. What I do I mix the grind saltine crackers with the bread crumbs first so it all mixes well and then I put my mayo and everything else.

    I love this recipe!! It’s easy, it’s hard to fail at, cheap, amazingly tasty!! I just spruced it up a little bit on my own I swapped worchestire for soy sauce because I didn’t have worchestire Fresh garlic Garlic powder Onion powder Chopped onions And I swapped vinegar for lemon juice for more of a fresher taste So good i double the recipe because I eat so much when I make it lol Also a food processor helps speed up the time too if u have it but I really like that he does everything manually because I feel like I could make this recipe anywhere anytime
